Monday Question – Healthy Dinner Ideas for 2019

Hey GOB writers, after a long day of writing, we are sure you like a nice dinner with maybe some wine (Game of Books podcast gives you some great wine ideas). What is a healthy but tasty go to dinner for you?

Christie:  I like to have fresh fish and vegetables whenever I can, but sometimes I don’t have time to get to the fish market or don’t want to spend too much time in the kitchen. That’s when the sushi grade ahi tuna that I get frozen from my nearby Fresh Market comes in handy. I keep some tuna steaks in the freezer that can be thawed quickly. Then I only have to season with salt and pepper or press into some sesame seeds on a plate for a coating before cooking in my cast iron pan. I heat it to medium high then put in a little olive oil and sesame oil. it only takes about 1.5 minutes per side for a rare filet that looks elegant on a bed of lettuce. Just add a soy sauce wasabi sauce for dipping and it is so delicious! We talked about this on Episode 11  which excited Cathi’s cat … Cathi will have to give it another try when she is down! Yum!

 

Cathi:  Can’t wait to try the tuna, Christie!  My family all have different preferences, so I love to make one dish bowls with all kinds of ingredients.  One I’m excited to try is the Mediterranean Quinoa Bowl with Roasted Red Pepper Sauce from Pinch of Yum. I’ve got all the ingredients on hand, including some roasted chicken that I’ll put out as an option, too.  Will make great left over lunches for the week, too!
